As Ningbo is a costal place with immense tidal-flat areas, it enjoys advantages in breeding razor clams. The Changjie area in Ninghai produces the best razor clams, as it is close to Sanmen Bay. The fresh water coming in brings in food organism and the sandy beaches provides best environment for razor clams.

The breeding of razor clams in Changjie dates back to about 1,000 years ago. In 1027, a scholar in Ninghai wrote: "…people raise clams for food and for trading".

The seeding begins in early April and the yield time falls around June next year when the clams grow to one kilo per 100. Based on the breeding period, razor clams fall into one-year type, two-year type and three-year type.

Razor clam is nutritious and tasty. It is found that each 100 gram of the meat contains 7.2 g protein, 1.1 g fat, 2.4 g carbohydrate, 3 g sugar, 133 mg calcium, 114 mg phosphorus, 227 mg iron, 200 kilo joule calories. Razor clam is of some medical effect. It can be used to treat stomach and throat problems.

The cooking method for razor clams is simple. First dunk them in water with salt so that clams can throw out the dirt inside the body, use a knife to cut open the joint on the back, then dunk them into boiling water, add some shallot, and the dish is done.
