The Xinfeng Portunid is another specialty of Ningbo. Portunids in winter are processed into delicious food. In processing, portunids are arrayed in a barrel or a jar in a layer, with mouths open upward. Then salt is added, and then another layer of portunids and some other salt, till the barrel or jar is filled full. The salt should be appropriate. Too much salt or insufficient salt may spoil the taste.
Previously the Xinfeng Portunid was made by local fishermen for themselves. In recent years with the development of food processing technology, processed portunid is available on market.

The Xinfeng Portunid is salty, sweet and tasty, with red ointment. It is best to be taken with vinegar and minced ginger.
